Dry cake? Dead cake (also known as cake that tastes like cardboard)? Not here!
A few months ago I stumbled upon a perfect chocolate cake recipe from Tastes Better From Scratch. I will never use a boxed chocolate cake mix again. This cake turns out every time and is so moist. I often make my cakes a day or two in advance – and I still never have trouble with this cake being dry.

I have made the mousse and ganache as well but since I now try to make cakes that are friendly for my toddler who is allergic to dairy, I usually just make the cake, with a few substitutions. I of course replace the milk with either almond milk or soy milk, and then I also use coffee instead of hot water.
Elijah helped me make the cake today. It was for his Grandpa’s 55th birthday! Elijah is excellent at helping clean the beater from the mixer and the bowl. I tell you they are spotless when he is done.
Elijah though? He is usually covered in chocolate from his forehead to his knees. That kid really takes his cleaning duty seriously.
Since we were baking for my father-in-law today, I also decided to make lemon pie – one of his favourites.
My go-to lemon pie recipe comes from Not so Humble Pie. I am always amazed at how quickly it comes together. The recipe can be found here. Today I chose to make the pie into 24 little tarts, that way my father-in-law could have a few and the rest could go with Cody to work.
An afternoon of baking is a great afternoon in my books. While the boys napped I put on some music and danced my way around the kitchen as I put together the cake and tarts. It was exactly what this tired mommy needed.
